Apple Cake


This year, our dad’s birthday was two days after Thanksgiving. With all the busy cooking that went into that, and our birthday cake, we wanted to make something simple. We decided to make our grandmother’s apple cake, which has always been a family favorite. The cake batter couldn’t be easier, and the flavor is delicious. Filled with tender cinnamon apple chunks, this cake is ideal for the fall/winter transition period and takes only a half an hour to throw together. It makes a nice treat to serve for guests since it serves quite a number of people as well. You will love it just as much as we do!

Apple Cake

Serves 12-16

Recipe from our grandmother


3 cups flour

2 cups sugar

1 tablespoon baking powder

1 cup vegetable oil

4 eggs

2 1/2 teaspoons vanilla

2 teaspoons salt

1/4 cup orange juice

6 apples, peeled and sliced

1/2 cup sugar plus 4 teaspoons cinnamon


Preheat oven to 350 degrees. Mix all ingredients together except for apples and cinnamon sugar. Grease a tube pan. Put a thin layer of batter, then a layer of apples and a sprinkling of cinnamon sugar. Repeat, finishing with a layer of cake batter and a sprinkling of cinnamon sugar. Bake for 1 hour and 40 minutes (sometimes it takes less than this, this is just an approximate time). Let cool slightly, and remove from pan. Serve warm or at room temperature. Enjoy!
